Chicken Angara

By: c.mohanan
Region: United Arab Emirates.
Dish: Non Vegetarian – Chicken
Main Ingredient: chicken and dry chilly

Ingredients
1.Boneless chicken -500gm
2.Finely chopped ginger-3tbsp
3.Finely chopped garlic -2tbsp
4.Finely chopped onion -4no
5.Dry redchilli-15no
(sock in water for an hour and make a smooth paste)
6.Tomato paste-4tbsp
7.Almond paste-4tbsp
8.Coriander powder-2tsp
9.Garam masala-1tsp
10.salt – to taste
11.oil-3 tsp
12.Finely chopped coriander leaves

Directions
1.Heat oil in pan and sauté onion, ginger and garlic until it become golden brown
2.Add coriander powder and garam masala
3.Add tomato paste ,sauté well
4.Add chilly paste and cook well, add almond paste , sauté 3 minutes
5.Add chicken pieces and salt, cook well.
6.Garnish with chopped coriander leaves and dry chillys.
Comments
Serve hot with nan, chapathi or rice

Homemade Mushroom Soup

INGREDIENTS

Metric Imperial
500 g mushrooms 1 lb mushrooms
90 g butter 3 oz butter
2 medium onions, chopped 2 medium onions, chopped

2 tablespoons plain flour 2 tablespoons plain flour
1 litre hot chicken stock (or vegetable stock for vegetarians) 2 pints hot chicken stock (or vegetable stock for vegetarians)

½ cup / 4 tablespoons cream 4 fl oz cream
Salt and freshly ground black

Start by cleaning the mushrooms with a damp cloth and chop the caps and stems.
This part is rather tedious, it takes quite a while to chop the the veg, but it is worthwhile as it takes less time for the soup to cook.
Special Cooking Equipment
None required for this r
Now, heat up the butter in a medium pan and cook the garlic and onions until they're soft but not browned. This should take five to six minutes.
The next step is to add the mushrooms, and cook over a high heat for 3 minutes whilst stirring constantly.
Sprinkle the flour over the mushrooms, mix well to combine.
Stir in the flour and mix well, making sure all the mushrooms are well coated.
Pour in the hot chicken stock and bring to the boil. Add the bay leaf and simmer for 10 minutes.
Remove the bay leaf and leave the soup to cool for a few minutes.
Place the soup in a food processor or if you have a hand blender this is much easier to use.
Blend well till smooth, it may be necessary to do this in two batches.
Rinse the saucepan and return to soup, season with salt and pepper and reheat until boiling.
Stir in the cream.....
Then serve and eat!

ഞാന്‍ ഒരു പാചകകുറിപ്പ് പോസ്റ്റ്‌ ചെയ്യട്ടെ.. എന്റെ അമ്മ പറഞ്ഞു തന്നതാ ..എന്റേതായ ഭാഷയില്‍ പറയാമെ :

ബീട്രൂറ്റ് പച്ചടി

ആവശ്യമുള്ള സാധനങ്ങള്‍ :
ബീട്രൂറ്റ് : 2 എണ്ണം (ഇടത്തരം)
ഇഞ്ചി : ഒരു വലിയ കഷണം
വെളുത്തുള്ളി : 4,5 അല്ലി
സവാള : 2 എണ്ണം (ചെറിയ ഉള്ളി ആണെങ്കില്‍ ഏറ്റവും നല്ലത്, ഒരു പിടി)
പച്ചമുളക് : 3 എണ്ണം
തൈര് : 3 കപ്പ്‌
കറിവേപ്പില : 2 തണ്ട്
കടുക് : 2 വലിയ സ്പൂണ്‍

ബീട്രൂറ്റ്, ഉള്ളി, ഇഞ്ചി, പച്ചമുളക് എന്നിവ വളരെ ചെറുതായി കൊത്തി അരിയുക.
പാത്രം ചൂടായി കഴിഞ്ഞു എണ്ണ ഒഴിക്കുക, ചൂടായ എണ്ണയില്‍ 1 സ്പൂണ്‍ കടുക് ഇടുക, കടുക് പൊട്ടിയതിന് ശേഷം അരിഞ്ഞു വച്ചിരിക്കുന്ന ഇഞ്ചി, പച്ചമുളക് ഉള്ളി എന്നിവ ഇട്ടു വഴറ്റുക, ഇത് നന്നായി വഴന്നു വരുന്നതിനുമുന്‍പേ, അരിഞ്ഞു വച്ചിരിക്കുന്ന ബീട്രൂറ്റ് ഇതിലെക്കിട്ടു, ആവശ്യത്തിനു ഉപ്പും കറിവേപ്പിലയും ചേര്‍ത്ത് നന്നായി വഴറ്റുക.. തീ കുറച്ചതിന് ശേഷം, തൈര് ഇതിലേക്ക് ഒഴിക്കുക. (തൈര് ഒഴിച്ചിട്ടു, ഒന്ന് ചെറുതായി ചൂടകുംപോഴെക്ക് തീ അണക്കാം) അവസാനം കടുക് ചതച്ചിട്ട് വാങ്ങുക.

@memnoji ..thanks.. for mushroom soup. mushrooms are gud healthy diet & also used for medicinal purpose. mostly i prefrred white button mushroom having a pleasant taste.

Naale oru puthiya receipe undakkikalayam. muzhuvanum garlic ittu. Tamizhnaatile famous kariyanathu. garlic kulambu ennau peru. vaalan puliyokke ozhichu . keralathile theeyal pole irikkum.

This typical Kerala preparation is a very spicy curry which goes well with rice or tapioca...

Ingredients

1. 2 red chillies split, cut into quarters lengthways and seeded
2. 1 small red onion, chopped
3. 2.5cm piece of fresh root ginger, peeled and chopped
4. 1 tbsp vegetable or sunflower oil
5. 1 tsp black mustard seeds
6. ½ tsp fenugreek seeds
7. 14 curry leaves, fresh or dried
8. ½ tsp turmeric
9. ½ tsp cracked black peppercorns
10. 250g jumbo prawns, leave some with their tails on if you like
11. 150ml reduced-fat coconut milk

Method

1. Make the chillies, onion and ginger along with 3 tbsp water into a smooth paste
2. Heat the oil in a heavy pan or wok. When hot, toss in the mustard and fenugreek seeds, and curry leaves – they will crackle and pop - and fry for 10 seconds.
3. Add the onion paste, turn the heat down a tad and cook without colouring for about 5 minutes. Splash in some water if it starts to catch.
4. Add the turmeric and cracked peppercorns and stir the spices around for a few seconds before tipping in the prawns.
5. Pour in the coconut milk and bring to a simmer, stirring all the time. The milk will take on a yellow colour from the turmeric.
6. Cook for 1 minute until every things heated through. Squeeze over some lime, sprinkle with fresh coriander and serve with rice.

also u had mentioned reduced fat coconut milk??? is it equvalent to having third coconut milk???

even if you use full cream (the first time coconut milk) it is okey. there is a coconut milk available in the cans in the super markets which is coming from Thailand. regarding ginger roots it is same GINGER.
